Cider Vinegar Dressing:

1/4 c. olive oil

1/4 c. cider vinegar

1 t. salt

1/8 t. pepper

1 clove garlic, quartered

Combine all ingredients in a Mar with a tight-fitting lid; shake vigorously. Refrigerate. At serving time, remove garlic and discard.

This salad is always made at our home with the first crop of fresh homegrown spinach and green onions. Serve with biscuits or cheese rolls for a quick weeknight dinner. —Judy

My grandmother used to make this simple batter bread. We never did find out where the name came from, but it is tasty and easy to make. Serve with a favorite chicken salad.

2 c. whole-wheat flour

1 c. all-purpose flour

1/2 c. sugar

1 t. salt

2 t. baking soda

2 c. buttermilk

Optional: 3/4 c. raisins

In a large bowl, stir together flours, sugar and salt; set aside. In a separate bowl, dissolve baking soda in buttermilk. Stir buttermilk mixture into flour mixture; beat well. Fold in raisins, if desired. Pour batter into a lightly greased 9"x5" loaf pan. Bake at 350 degrees for one hour, until golden. Cool on a wire rack. Makes one loaf.
